
Ingredients:
- 8 large chicken tenderloins (cut to size)
- 1 clove garlic, crushed
- 3 teaspoons fish sauce
- 2 teaspoons grated fresh ginger
- 24 fresh Kaffir lime leaves
- Lime quarters, to serve
Satay Sauce:
- 2 teaspoons peanut oil
- 4 red Asian shallots, finely chopped
- 2 cloves of garlic
- 2 teaspoons grated fresh ginger
- 2 small red chillies (optional)
- 200 ml coconut milk
- ½ cup (125 g) crunchy peanut butter
- 2 tbsp soft brown sugar
- 2 tbsp lime juice
- 1 ½ tablespoons fish sauce
- 2 teaspoons soy sauce
- 1 fresh kaffir lime leaf
Method:
- Combine the chicken, garlic, fish sauce and ginger. Cover and refrigerate for approx 1 hour.
- To make the sauce, first heat the oil in a saucepan over a medium heat. Add the shallots, garlic, ginger and chilli. Cook for 5 minutes or until golden.
- Add the rest of the ingredients, reduce the heat and simmer for 10 minutes or until the sauce has thickened.
- Thread a lime leaf and chicken strip on each skewer. Can be served with rice (optional).
- Place skewers in small bowl with juice on top. Place Lime on the side. If serving with rice, you can place this small bowl on a dinner plate and put rice on the side (on the dinner plate).
