Ingredients:
- 500g Pasta (any short pasta will be good e.g, penne, fusilli, shellss)
- 400g tin of Tuna (tuna in olive oil is best)
- 700g Pasta Sauce
- 500g Cannellini Beans (you can use the canned beans)
- 2 eggs
- 2 cups Cheddar Cheese (shredded)
- Parsley
- Basil
- 2 stalks celery
- Chilli
- ½ Red Capsicum
- Pepper and Salt
- Olive oil
Method:
- Prepare the sauce first: In a saucepan pour a little olive oil and the tuna and simmer for a few minutes.
- Chop the parsley, basil, celery, chilli and red capsicum and add to the saucepan.
- Allow to simmer until everything begins to soften.
- Add the pasta sauce and water and stir thoroughly.
- Add salt and pepper to taste. Cook slowly for at least 45 minutes.
- Stir occasionally. Do not allow the sauce to thicken. Add more water if necessary.
- Bring a pot of water to the boil. Add teaspoon of salt.
- Put in the pasta and stir to stop sticking together.
- Do not allow the pasta to cook completely. Remove from heat before it reaches al dente.
- Drain the water completely.
- Place the pasta into a baking dish.
- Cover with the shredded cheese and mix.
- Beat the two eggs and add to the pasta. Mix again.
- Add the cannellini beans and the tuna sauce.
- Gently combine everything together.
- Cover the baking dish with a sheet of baking paper.
- Cook in a moderate oven for 40 minutes.
Serve and enjoy. (You Can Easily Vary This Recipe. Instead Of Tuna You Can Use Any Mince Meat Or A Combination Of Minced Meats.)
